PARTY FOOD
Classes Offered: Aug 27-29, Sept 3-5
This class turns snack time into party time! A variety of bite sized treats are created in this hands-on culinary class. From sweet to savory, crunchy to creamy every combination is designed to be a mini version of your favorite food. Students will learn how to plan, prep and plate crowd pleasing hors d’oeuvres for family and friends.

LOTSA PASTA
Classes Offered: July 2-4, 9-11
Get ready to mix, cut and shape your way through this classic pasta class! We’ll be making our own pasta dough, fillings and a variety of familiar sauces as well as a quick study of the difference when cooking fresh vs. boxed pasta; what to look for and how to tell when it’s done.
DESSERTS
Classes Offered: Sept 10-12
Ooh la la! It’s time to whisk, torch and taste your way through this classic French dessert class-all hands-on and chef instructed. You’ll appreciate how simple ingredients come together with careful technique to create these truly elegant desserts.

HAND PIES
Classes Offered: July 16-18, 23-25
Bake your way to delicious! Fun, flavorful and portable, these hand pies are perfect for food on the go. From golden, flaky crusts to mouthwatering fillings, students will explore classic and creative combinations, both sweet and savory.

Get ready to cook like a pro and eat like a champion! Turn ONE meal into many in this chef taught, hands-on cooking class that shows young chefs how to think and cook like a pro. We’ll start by making a whole roasted chicken dinner.

GOOD MORNING
Classes Offered: July 30-31, Aug 1, 6-8
Get ready for a whisk-tastic adventure! In this hands-on culinary class, kids will learn to cook up a breakfast spread that’s both delicious and full of real kitchen skills. Guided by a professional chef, young cooks will crack, mix, flip and create.

About Us
Tanna Wagenman,founderand principal instructor at The Peppercorn Academy grew up inRed Wing, Minnesota. After graduating from Red Wing High School, Chef Tanna studiedchemistry at North Dakota State University.Her passion, however, layin the culinary artsand she pursued her passion byattendingthehighly reputable culinary school in HydePark, New York,The Culinary Institute of America,where she earned her degree and twomedals for excellence.
Shortly after graduation Chef Tanna was granted a security clearance by the United StatesSecret Service and was selected by the Presidential Family as their summer chef inKennebunkport, Maine.
Chef Tanna’s 30-year career as a classically trained chef included stints with the HyattHotelCorporation,private airline catering,aFrench chocolate company (yes, chef Tanna isalso a chocolatier)and with an international pastry and dessert wholesaler. She hasowned, operated or worked in a number ofhotels,restaurantsandcafes fromMarylandtoHawaii-withquitea few places in between!
Chef Tanna is devoted to passing on the skills and techniques of a near lifetime in theculinary industry to another generation. She is committed to teaching young people theease and joy of making healthy, fresh unprocessed meals which can be enjoyed by thewhole family.
At Peppercorn Academystudentswill work hands-on with Chef Tannaat their own fullyequipped workstationsusingtechniques andrecipes collected over many years in theculinary world. She hopes to give young people the skills, knowledge and confidence to becomfortable preparing fresh, healthy meals in their own home kitchen.
